For “pancakesunday” I have created these yummy blueberry pancakes this morning. They are super easy and quick to make and are all vegan. Even without using eggs these pancakes are fluffy and do not stick to your pan. Perfect for your sunday mornning breakfast or brunch when you feel like indulding but still want to eat healthy and vegan.

Ingredients for 1 batch of blueberry pancakes

  • 80 g (0,74 cups) oats
  • 65 g (0,44 cups) blueberries
  • 175 ml (40 oz) oat milk
  • 1 tbsp agave syrup
  • 1 banana (ripe or overripe)
  • cinnamon
  • salt
  • oil

Instructions

  1. Blend 80g (0,74 cups) oats in your kitchen machine or blender; wash 65 g (0,44 cups) blueberries and cut them into quarters
  2. Mash 1 ripe or overripe banana in a bowl.
  3. Mix oats, blueberries, banana with 175 ml (40 oz) of oat milk, 1 tbsp agave syrup and a pinch of cinnamon and salt. 
  4. Heat some oil in a pan and bake pancakes golden brown from both sides. 
  5. Enjoy your blueberry pancakes with some maple syrup or yoghurt. 
  6. Tip: for a healthier topping bring a handful of blueberries, 1 tbsp Wasser, 1tsp agave syrup and 1 tbsp lemon juice to simmer in a small pot, let cool down shortly and pour over your pancakes.

Notes
