These quick and easy chocolate coffee cookies are nut just super delicious but also healthier than store bought cookies and ready within no time. With a subtle taste of vanilla and coffee they are perfect for your coffee or tea break and are sugar free and completely vegan. Perfect if you want to serve somethings small and healthy – also great for spontaneous visitors.
Ingredients for 12 chocolate coffee cookies
- 50 g (0,2 cups) vegan margarine or butter
- 75 ml (2,5 oz) brewed coffee (cooled down)
- 40 g (0,2 cups) chocolate chips
- 180 g (0,43 cups) oats
- 1 tbsp agave syrup
- 1 tbsp plant milk
- 3-4 drops vanilla extract
- 1/3 tsp backing powder
Instructions
- Blend 180 g (0,43 cups) oats until it looks like flour.
- Mix 1/3 tsp baking powder and 40 g (0,2 cups) chocolate chips with the oat flour.
- In a separate bowl mix 75 ml (2,5 oz) brewed coffee (cooled down), 50 g (0,2 cups) vegan margarine or butter, 1 tbsp plant milk, tbsp agave syrup and 3-4 drops vanilla extract.
- Blend liquid and solid ingredients and kneed until you have a homogenious dough.
- Divide your dough into 12 equally big pieces.
- Form dough pieces into small balls and add to a baking tray. Slightly press the dough balls into the typical cookie shape.
- Bake at 180° C (356° F) top-/ bottom heat for 10 Minutes at until golden brown
- Let cool down afterwards and enjoy your cookies with a cup of coffee or tea.
