Granola bars that really taste like coconut and are also healthy? Don’t exist? Since today, after many attempts to create a coconut bar, I can finally share a great recipe with you. As usual, the bar is vegan, contains no sugar and can be baked on the tray as well as in a granola bar baking pan. If you still like it more chocolaty, you can melt some dark chocolate and brush one side of the bars with it or entirely dip them into it.

Ingredients for 8 coconut bars

  • 100 g (1 cup) shredded coconut
  • 300 g (2,78 cups) oats
  • 50 ml (1,7 oz) coconut drink/milk
  • 3 tbsp coconut oil
  • 2 tbsp coconut cream or purée
  • 2 tbsp date syrup or agave syrup
  • 30 g (0,3 cups) coconut chips
  • 60 g (0,33 cups) dark chocolate chips
  • 1 pinch of salt


  1. Melt 3 tbsp coconut oil and 2 tbsp coconut cream or purée in a pot. Once everything is liquid add 2 tbsp date syrup or agave syrup and remove from heat. 
  2. Blend 300 g (2,78 cups)oats in a kitchen machine or smoothie maker until the texture is like flour.
  3. Mix oat flour with 100 g (0,3 cups) shredded coconut.
  4. Add your liquid mixture of coconut oil, coconut cream or purée and date or agave syrup to your coconut and oat mixtures.
  5. At last add 50 ml (1,7 oz) coconut drink, 1 pinch of salt, 30 g (0,3 cups) coconut chips und 60 g (0,33 cups) dark chocolat chips and mix everything. 
  6. Fill mixture into granola bar molds or spread on a baking tray with baking paper. 
  7. Bei 150 Grad Ober-und Unterhitze für ca. 25-30 goldbraun backen. Am besten mit Alufolie bedecken, sodass sie Kokosflocken nicht anbrennen.
  8. Die Kokosriegel nach dem Backen gut abkühlen lassen und anschließend vorsichtig aus der Form drücken bzw. in Stücke schneiden auf dem Blech.
  9. Tipp: Wer es schokoladiger mag, einfach etwas Zartbitterschokolade schmelzen und die Riegel darin kurz eintauchen.
