Finally summer weather – sunshine, warmer temperatures und finally summery food. For me summer has always tasted like coconut  – no matter in which form; ice-cream, cocktails, smoothies, granola, porridge … How about coconut rice pudding with mango and passion fruit for a little change? This rice pudding is anything else but boring and ready to eat within 20 minutes. While usual rice pudding contains a lot of sugar this recipe comes without added sugar or milk and is also completely vegan, gluten-free and dairy-free.

Tip: To enjoy the coconut rice pudding as a cold snack, put it into the fridge for about half an hour. Tastes super good, if you top it with some additional coconut yoghurt!

Ingredients for 2 servings

  • 250 ml coconut milk (8,5 oz)
  • 100 ml water (3,4 oz)
  • 100 g rice (0,51 cups)
  • 80 g mango (0,5 cups)
  • 1 tsp agave syrup
  • 1 tbsp coconut flakes
  • 1 passion fruit
  • 1 pinch of sea salt

Instructions

  1. Slowly bring 250 ml coconut milk (8,5 oz), 100 ml water (3,4 oz), 100 g rice (0,51 cups), 1 tsp coconut flakes, a pinch of sea salt and 1 tsp agave syrup to simmer.
  2. Cook on slow heat, while occasionally stirring until the rice has absorbed the liquids. 
  3. In the meantime blend 80 g (0,5 cups) of mango and one passion fruit. 
  4. Serve rice in bowls and top with the mango and passion fruit purée.
