Today I have created the perfectly juicy and sweet cake for these hot summer temperatures. With just nine simple ingredients, this vegan peach cake is quick to prepare and also goes perfectly with vanilla ice cream or a cold iced coffee on the balcony or in the garden.

Ingredients vegan peach cake

  • 100 g (0,76 cups) flour
  • 80 g (0,74 cups) oats
  • 200 ml (6,76 oz) oat drink
  • 2 tbsp flaxseed
  • 2 tbsp agave syrup
  • 1 tsp baking powder
  • 10 drops vanilla extract
  • 3 peaches
  • almond slivers

Instructions

  1. Mix 2 tbsp of flaxseed with 6 tbsp and set aside.
  2. Crush 80 g (0,74 cups) of oat flakes in a food processor and mix with 100 g  (0,76) of flour and 1 tsp of baking powder.
  3. Add 200 ml (6.76 oz) of oat drink, 2 tbsp of agave syrup and 10 drops of vanilla extract to the flax seeds.
  4. Halve 3 peaches and then cut into  slices.
  5. Mix the liquid and dry ingredients.
  6. Line the baking pan with parchment paper; Spread a layer of peach slices on the bottom.
  7. Add the batter, distribute it evenly, distribute the remaining peaches on top and decorate with almond slivers.
  8. Bake for about 45 minutes at 170 ° C (338 ° F) top and bottom heat.
