Blend 180 g (0,43 cups) oats until it looks like flour.
Mix 1/3 tsp baking powder and 40 g (0,2 cups) chocolate chips with the oat flour.
In a separate bowl mix 75 ml (2,5 oz) brewed coffee (cooled down), 50 g (0,2 cups) vegan margarine or butter, 1 tbsp plant milk, 1 tbsp agave syrup and 3-4 drops vanilla extract.
Blend liquid and solid ingredients and kneed until you have a homogenious dough.
Divide your dough into 12 equally big pieces. Form dough pieces into small balls and add to a baking tray. Slightly press the dough balls into the typical cookie shape.
Bake at 180° C (356° F) top-/ bottom heat for 10 Minutes at until golden brown.
Let cool down afterwards and enjoy your cookies with a cup of coffee or tea.
